Katsuobushi is a dried product of cold-water fish (mainly produced in the tundra). Because it looks like a firewood bar, it is called "Chai Yu" by the Cantonese. The Katsuobushi is also called 'Dried Bonito stick' or ‘Dried Skipjack Tuna’. The dried meat of the dried fish is golden and the meat is silky and tender.
